Job Description

Kitchen Captains are junior members of the management team.  They work directly with the Assistant Kitchen Manager and Kitchen Manager to provide leadership to the back of house restaurant operations.  Their duties include:

  • Assisting with execution of daily kitchen functions.
  • Filling out count sheets and helping set and adjust prep par levels.
  • Performing line checks and logbook entries on a daily basis.
  • Upholding company standards in regard to food quality and presentation.
  • Helping to manage food and labor costs.
  • Assisting with inventory counts.
  • Assisting with training and developing BOH staff.
  • Making certain that sanitation and safety standards are met at all times. 

Requirements

Education & Experience

  • High school diploma or GED is preferred.
  • Minimum of one year experience in a kitchen leadership role.

Knowledge, Skills, and Abilities

  • Must have good communication, organization, and leadership skills.
  • Proven ability to handle challenges in a fast-paced environment with complex, multiple tasks and deadlines.
  • Knowledge of food, knife, and kitchen equipment safety.

This position has flexible scheduling that requires you to work rotating shifts, including nights, weekends, and some holidays.

Physical Requirements

  • Must be able to work on foot for extended periods of time (up to 10-12 hours per day).
  • Must be able to move 50 lbs for distances of up to 10 ft.
  • Must be able to withstand work environments for 0 degrees F to 100 degrees F.
  • Must be able to balance and move up to 25 lbs for distances of up to 50 ft.
  • Must be able to understand and respond to employees in a loud environment.
  • Must be able to visually recognize proper food presentations and food quality.
